Let’s get cooking! Here are five mouthwatering recipes to kickstart your National BBQ Week celebrations:
BBQ Pulled Pork Sandwich
A classic American favourite, this recipe is guaranteed to please a crowd. Slow-cooked pork shoulder infused with smoky barbecue flavours is the star of the show. Serve it on toasted buns with your favourite BBQ sauce and coleslaw for a satisfying and delicious meal.
Ingredients:
- 4 lb boneless pork shoulder
- 2 tbsp brown sugar
- 1 tbsp paprika
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup apple cider vinegar
- Your favourite BBQ sauce (of your choice)
- Hamburger buns
Instructions:

Prepare the rub: In a small bowl, combine brown sugar, paprika, chili powder, garlic powder, onion powder, salt, and pepper. Rub the spice mixture all over the pork shoulder, ensuring it’s well coated.

Set up your grill: Prepare your grill for indirect heat. This means setting up a two-zone fire: pile your charcoal briquettes on one side of the grill and leave the other side empty. Alternatively, on a gas grill, turn one burner on high and leave the other side off.

Smoking time: Place the pork shoulder on the cool side of the grill (away from the heat source). Add wood chips (hickory or applewood work well) to the hot side of the grill for smoke flavour. If using a gas grill, place the wood chips in a smoker box and position it over the hot burner.

Low and slow: Close the grill lid and smoke the pork shoulder for 6-8 hours, maintaining a grill temperature of around 225°F (110°C). Spritz the pork with apple cider vinegar every hour or so to keep it moist.

Testing for tenderness: After 6-8 hours, check the internal temperature of the pork shoulder with a meat thermometer. It should reach an internal temperature of 195°F (90°C) for safe consumption and optimal shredding.

Shredding success: Once the pork reaches the desired temperature, remove it from the grill and let it rest for 20 minutes or so. This allows the juices to redistribute throughout the meat. Using two forks, shred the pork into bite-sized pieces. Discard any excess fat.

Sauce it Up: In a large bowl, toss the shredded pork with your favourite BBQ sauce, ensuring it’s evenly coated.

Roasted Tequila & Lime Chicken Wings

- 1/4 cup tequila (silver tequila works well)
- 1/4 cup fresh lime juice
- 2 tbsp olive oil

Grilling Time: Remove the chicken wings from the marinade and discard any excess marinade. Place the wings on the preheated grill, leaving space between them for even cooking.

Testing for Done-ness: After 2-3 hours of smoking (or 3-4 hours with wrapping), check the tenderness of the ribs. Insert a toothpick or paring knife between the bones – it should slide in with minimal resistance. The meat should be starting to pull away from the bone.
